Ingredients:

  • 1l Gin
  • 500g damsons
  • 500g sugar

Method:

Prick each damson a couple of times with a fork and place into a big enough kilner jar. The jar has to be air and watertight to withstand the shaking. Add the sugar and the gin. Shake. Shake each day until all the sugar is dissolved. Leave somewhere dark. Then shake less often, once a week for a few weeks, once a month for a few months. Strain into bottles. I use a paper coffee filter for perfect liquid.
